Too much excitement just might kill me!
Once again, I’ve adapted this from a recipe in 4 Ingredients – Kids. What can I say, I’m a lazy cook!
The original version was very sweet, and I had some problems baking it long enough (without burning) that it held together outside the fridge (the only binder was butter, so it set up quite solidly but melted quickly in hot little hands!
I reduced the butter a little (because butter comes in 250g blocks and it’s much easier to use 125g than 175g!). Then I added eggs to help it bind better (plus a bit of protein), omitted the sugar and added some coconut.
The result is a sort of muesli bar. It makes a great breakfast or snack – I keep it in the freezer and Monkey eats it frozen just like that (he does that with a lot of things!). It would be great with the addition of some chopped dried fruit, nuts and/or seeds.
125g butter, melted
1 cup dessicated coconut
2 1/2 cups rolled oats
1/4 cup golden syrup
Combine all ingredients and press into a tin. Cook at 160C for 45 minutes or until golden brown.
