Cheesy spinach quinoa muffins

I’m eternally lazy and like to have a range of healthy snacks stuffed in the freezer, so I can feed Monkey (and myself) at a moment’s notice. This is especially convenient since Monkey likes to eat everything frozen. My stash basically disappeared for several months, and he’s been eating an unholy amount of cottage cheese. Now that he likes to help me bake, it’s time to get back on track!

Today, we baked savoury muffins based on this recipe. Of course to do that I first had to fish the muffin pan out of the sandpit and wash it, so be sure you consider the logistics before you go ahead! And while they were baking we gave the dogs a bath, which sent them so nuts that one of them ripped his (very long – oops!) toenail practically clean off and bled all over the floor. We’re waiting for the mobile vet to pay us a visit – luckily the dogs are due for their vaccinations anyway (and thank chocolate for our mobile vet service! Two dogs plus toddler at a vet’s office? That’s the stuff nightmares are made of!).

I cooked quinoa especially for the muffins- 1/2 a cup dry, made following the packet directions. I like it, and it’s very good for you, but it is super messy to feed to a toddler and the grains are too small for the dogs to clean up (same goes for cous cous) so we rarely eat it. Of course if you have leftovers from something else that would be the way to go!

These turned out really yummy – I even surprised myself. They’re not the prettiest thing ever, but Hubs would voluntarily eat them so you know they’re palatable! They would also be fantastic with some bacon added, or if the muffin tins were lined with ham before adding the mix to make a kind of ham patty pan. Delicious!

Cheesy spinach quinoa muffins

1 cup self raising flour
1/2 tsp baking powder
1/2 cup basil leaves
1 cup frozen spinach
1 cup tasty cheese, grated
1 cup milk
1/2 cup oil
2 eggs
1 1/2 cups cooked quinoa

Sift the flour and baking powder. Mix in torn or chopped basil leaves, chopped spinach and grated cheese. Make a well in the centre and add liquid ingredients, then combine. Stir in quinoa.

Fill 12 muffin tin with mix. Bake at 180 C for about 40 minutes or until a skewer comes out clean.

    Mmmmm! If I ever tried anything new ever, I’d try these! The basil is an extra nice touch.

      I think the basil is the key. Without it they’d probably be average at best!
